Prep-ahead Breakfast Burritos

Get organised for Christmas brunch and make these delicious prep-ahead brekkie burritos with egg, crispy bacon, spinach, red onion and barbecue sauce. Simply reheat when you're ready to eat.

Ingredients

  • 10 free range eggs, lightly beaten
  • 1 1/2 cup tasty cheese, shredded
  • 1 punnet chives, chopped
  • 600 grams shortcut bacon rashers, diced
  • 8 spinach and herb wraps
  • 60 grams baby spinach leaves
  • 1 red onion, sliced
  • 2/3 cup BBQ sauce
  • 1/2 cup milk
  • 1 tablespoons extra virgin olive oil

  • 60 grams baby spinach leaves

  • 1/2 cup milk
  • 1 tablespoons extra virgin olive oil

Method

  1. Step 1 of 5
    Combine eggs, milk, cheese and chives in a bowl and whisk lightly.
  2. Step 2 of 5
    Season. Pour egg mixture into a deep non-stick frying pan over medium-low heat. Cook, scraping in from the edges occasionally, for 6-8 minutes or until just set.
  3. Step 3 of 5
    Meanwhile, heat oil in a frying pan over medium heat. Add bacon and cook, stirring, for 5 minutes or until crispy.
  4. Step 4 of 5
    Fill wraps with egg, bacon, spinach, onion and half of the sauce. Wrap in aluminium foil. Freeze until ready to heat and serve.
  5. Step 5 of 5
    To reheat, preheat the oven to 200°C (180°C fan-forced). Place burritos on a large baking tray. Bake for 20 minutes, or until heated through. Serve with remaining sauce.
