Pulled Jackfruit Sliders

Forget the humble hamburger! These Pulled Jackfruit Sliders are perfect for entertaining guests or feeding the family!

Ingredients

  • 300 grams canned jackfruit, drained
  • 2 tablespoons oil
  • 1 red onion, sliced
  • 2 cloves garlic, crushed
  • 1/2 teaspoons ground cumin
  • 1/2 teaspoons ground coriander
  • 1/2 teaspoons ground paprika
  • 2 tablespoons chipotle sauce
  • 1 teaspoons salt
  • 400 grams tomatoes, crushed
  • 2 tablespoons BBQ sauce

To serve

  • 3 cups coleslaw
  • 12 slider buns

Method

  1. Step 1 of 6
    Begin by draining the jackfruit. Cut the core from each piece as they are a little tough.
  2. Step 2 of 6
    In a large saucepan, heat the oil. Add the onion and garlic cooking for 4 or 5 minutes until softened. Add the cumin, coriander and paprika cooking for 2 minutes until fragrant.
  3. Step 3 of 6
    Add the chipotle, salt, tomatoes and barbeque sauce, and slowly bring to a simmer.
  4. Step 4 of 6
    Add the jackfruit and cook for 30 minutes stirring every five until the liquid has reduced and the jackfruit shreds easily. Remove from the heat.
  5. Step 5 of 6
    Shred with two forks, and season to taste. Cool for 15 minutes.
  6. Step 6 of 6
    Serve with warm slider buns, coleslaw and shredded jackfruit. Enjoy!
