Red Cabbage & Apple Slaw with Mustard Dressing

Ingredients

  • 2 cups red cabbage, shredded
  • 2 cups green cabbage, shredded
  • 1 spring onion, chopped
  • 1 orange, segmented
  • 1 green apple, cut into sticks
  • 1/2 cup parsley, chopped
  • 100 grams feta, crumbled
  • 2 tablespoons lemon juice
  • 2 teaspoons honey
  • 1 teaspoons Dijon mustard
  • 1 pinch salt
  • 1 pinch pepper
  • 2 tablespoons olive oil
  • 2 cups red cabbage, shredded
  • 2 cups green cabbage, shredded

Method

  1. Step 1 of 3
    Place the red cabbage, green cabbage, spring onion, orange, apple, parsley, and feta into a large bowl.
  2. Step 2 of 3
    Season with salt and pepper before serving to prevent the coleslaw from releasing too much water.
  3. Step 3 of 3
    For the mustard dressing, shake together the olive oil, lemon juice, honey, and mustard in a jar. Pour over the slaw and toss before serving.
