Savoury Bread & Butter Pudding
This recipe for Savoury Bread & Butter Pudding uses pantry staples to create a deliciously tasty cheesy bake that's perfect for brunch! Best served warm with tomato relish.
Ingredients
- 60 grams spreadable butter
- 1/2 loaf crusty white bread
- 1 onion, cut into wedges
- 200 grams streaky bacon
- 1/4 cup grated parmesan
- 75 grams feta, crumbled
- 50 grams baby spinach
- 6 eggs
- 1 tablespoons butter
- 1 tablespoons olive oil
- 1 1/2 cups milk
- 1/2 teaspoons salt
- 1/4 teaspoons freshly ground pepper

- Step 1 of 8Preheat oven to 180°C fan bake (160°C regular).
- Step 2 of 8Grease a 6-cup capacity baking dish with butter.
- Step 3 of 8Take the bread and spread 2 sides of each piece roughly with butter. Place buttered bread into baking dish. Scatter over the spinach and push some between the pieces of bread. Set aside.
- Step 4 of 8Place the oil in a frying pan over a medium heat. Add onion and bacon and fry gently until onions are translucent and bacon is cooked through, for about 5 minutes. Take off the heat and set aside.
- Step 5 of 8While the bacon and onion is cooking, take a large bowl, add the eggs, milk, salt, and pepper. Whisk to combine. Add half the Parmesan nd mix. Pour over the bread and then leave to sit for 5 minutes.
- Step 6 of 8Add the bacon and onion mix to the bread, spoon it over and nuzzle between pieces of bread so that not too much is on the top. Scatter over the remaining Parmesan and feta.
- Step 7 of 8Bake for 40 - 45 minutes until the bread is golden and egg mix is all cooked. Check halfway through cooking and if it looks like it is browning too quickly cover with foil.
- Step 8 of 8Serve while warm with tomato relish.
