Savoury Muffins
As a lunchbox staple, or an afternoon snack, these Savoury Muffins will certainly hit the spot.
Recipe Tip Leftover roasted pumpkin, caramelised onions or a little blue cheese would all be good additions to these muffins.
Ingredients
- 1/2 cup courgette
- 1/4 cup spring onion
- 75 grams ham, finely sliced
- 2 tablespoons pine nuts
- 1/2 cup capsicum
- 3/4 cup spinach
- 50 grams feta, cubed
- 2 cups grated tasty cheese
- 2 1/2 cups self raising flour
- 1 1/2 cups milk
- 1/2 cup oil
- 1 pinch freshly ground black pepper
- 2 eggs

- Step 1 of 5Preheat the oven to 200°C. Spray a 12-hole muffin pan generously with spray oil.
- Step 2 of 5Place the flour and cheese in a large bowl. Stir to combine and make a well.
- Step 3 of 5Beat together the eggs, oil and milk. Pour into the dry ingredients and lightly fold together until just combined. Fold in the vegetables, feta and ham and season with black pepper.
- Step 4 of 5Spoon the muffin mixture into the prepared pan and top with pine nuts.
- Step 5 of 5Bake for 20-25 minutes until golden. Leave to cool in the pan for 5-10 minutes before transferring to a cooling rack.
