Smoky BBQ Mac & Cheese
There's no better way to use leftover ham than this recipe for Smoky BBQ Mac & Cheese! This dish is in and out of the oven in no time at all.
Ingredients
- 300 grams macaroni
- 1/2 onion, diced
- 1/4 cup BBQ sauce
- 2 tablespoons ground paprika
- 2 tablespoons tomato paste
- 200 grams ham, diced
- 2 cups grated or crumbled cheese
- 1/3 cup panko breadcrumbs
- 2 cups milk
- 50 grams butter
- 1/3 cup flour
- 1 teaspoons salt

- Step 1 of 7Preheat oven to 180°C
- Step 2 of 7Cook pasta in a large saucepan of salted boiling water for 10 minutes. Drain and reserve.
- Step 3 of 7While pasta is cooking, melt butter in a large saucepan. Add onion, stir with a wooden spoon and cook on medium heat for 4 minutes to soften. Add flour and cook for 4 minutes stirring to cook evenly.
- Step 4 of 7Add milk a small amount at a time until combined and thickened. Add barbecue sauce, ground paprika, tomato paste and salt. Stir to combine. Add half the cheese and stir until smooth.
- Step 5 of 7Add the cooked pasta and ham to the pot and stir thoroughly to combine. Transfer into an oven-proof dish spread with wooden spoon so the pasta sits flat.
- Step 6 of 7Sprinkle over with the rest of the cheese and top with panko bread crumbs.
