Spiced Kūmara with Yoghurt Dressing

Ingredients

  • 4 kūmara, cut into 2 cm chunks
  • 1/4 teaspoons smoked paprika
  • 1/4 teaspoons chilli flakes
  • 1 tablespoons orange zest
  • 2 tablespoons orange juice
  • 2 teaspoons grated fresh ginger
  • 2 teaspoons runny honey
  • 1/2 cup greek yoghurt
  • 2 tablespoons olive oil
  • 1/2 teaspoons salt
  • 4 kūmara, cut into 2 cm chunks

  • 2 tablespoons orange juice
  • 2 teaspoons grated fresh ginger
  • 2 teaspoons runny honey
  • 1/2 cup greek yoghurt
  • 2 tablespoons olive oil
  • 1/2 teaspoons salt

Method

  1. Step 1 of 4
    Preheat an oven to 200°C (180C fan-forced°C). Line a large baking tray with paper.
  2. Step 2 of 4
    Place the kūmara onto the tray. Sprinkle over the smoked paprika and salt. Place into the oven for 20 minutes, then sprinkle on the chilli and orange zest cooking for a further 10 minutes until crisp and golden.
  3. Step 3 of 4
    To make the dressing, combine the yoghurt, orange, ginger, honey, chilli and paprika in a small bowl, stirring well to combine.
  4. Step 4 of 4
    Spoon over the kūmara while warm and serve.
