Spinach, Nut & Cranberry Wreath
Celebrate the season with a Spinach, Nut & Cranberry Wreath! This tasty recipe is also the perfect centrepiece for Christmas lunch or dinner.
Ingredients
- 300 grams spinach
- 300 grams soft tofu
- 1/2 teaspoons ground nutmeg
- 2 cloves garlic
- 2 tablespoons chopped rosemary leaves
- 2 tablespoons cranberry jelly
- 1 tablespoons lemon zest
- 1/4 cup lemon juice
- 1 cup dried cranberries
- 1/2 cup canned chickpeas
- 1/4 cup pine nuts
- 8 sheets filo pastry
- 1 pinch salt
- 1 pinch pepper

- 8 sheets filo pastry
- 1 pinch salt
- 1 pinch pepper
- Step 1 of 6Preheat an oven to 200°C (180°C fan-forced). Line a tray with baking paper.
- Step 2 of 6Place the spinach into a large bowl and microwave for 2 minutes. When it is cool enough squeeze any excess water out. Place into a kitchen processor.
- Step 3 of 6Add the tofu, nutmeg, garlic, rosemary, cranberry, zest and juice blending until well combined. Place it into a large bowl and stir through the cranberries, chickpeas and nuts. Season with salt and pepper.
- Step 4 of 6To build your wreath, place one sheet of pastry on a bench. Brush or spray with oil and stack another one. Repeat this 2 more times. Then repeat the process so you have two piles of pastry. Join them with a little oil spray to make one long piece.
- Step 5 of 6Place the filo onto the tray. Spread your filling along the middle of the filo, keeping it loose, so you can curve it into the circle. If it splits anywhere, top with a bit more filo. Spray with oil and bake for 20 minutes or until golden.
- Step 6 of 6Serve warm with cranberry jelly on the side.
