Spirals with Broccoli & Chicken

Ingredients
- 1 head broccoli
- 250 grams Diamond spirals
- 1/4 cup pesto
- 1/4 cup basil or mint
- 300 grams chicken tenderloins or chicken breast

- Step 1 of 8Cook the chicken covered in a lightly oiled frying pan until the juices run clear. Cooking time will depend on the thickness of the chicken. As a guide, tenderloins will take about 3 minutes each side and breast 6 – 9 minutes each side.
- Step 2 of 8Cut the broccoli into small florets. Trim the stem and slice it thinly.
- Step 3 of 8Cook the spirals to packet directions, adding the broccoli pieces about 2 minutes before the end of cooking time. Cook until the spirals and broccoli are just cooked.
- Step 4 of 8Drain well reserving ¼ cup of cooking liquid.
- Step 5 of 8Slice the chicken into thin strips about 1 centimetre thick.
- Step 6 of 8Mix through the spirals with enough cooking liquid to moisten the mixture.
- Step 7 of 8Mix through the pesto.
- Step 8 of 8Serve garnished with basil or basil mint.
