Strawberry & Banana Loaf

Ingredients

  • 2 ripe bananas
  • 1 teaspoons vanilla extract or essence
  • 1 egg
  • 250 grams strawberries, topped and sliced
  • 1/2 cup brown sugar
  • 80 grams butter, melted
  • 2 cups self raising flour

Method

  1. Step 1 of 6
    Preheat an oven to 150°C (170°C fan forced).
  2. Step 2 of 6
    Line a 20 x 10cm loaf tin with baking paper.
  3. Step 3 of 6
    Place the bananas, sugar, vanilla, butter and egg into a food processor, and blitz until smooth. Add the flour and blitz again.
  4. Step 4 of 6
    Spoon half of the mixture into the loaf tin and smooth with the back of a spoon. Spread half of the strawberries over the batter then spread over the remaining batter.
  5. Step 5 of 6
    Top with the remaining strawberries in a pattern down the middle or dot them all over.
  6. Step 6 of 6
    Place into the oven for 1 hour. Cover with tin foil after 30 minutes to prevent the top from over browning.
