Strawberry & Chicken Salad with Strawberry Dressing

You'll forget all about a Caesar Salad with this recipe for Strawberry and Chicken Salad with Strawberry Dressing! This fresh salad is full of baby cos lettuce, avocado, mint leaves, plus strawberries and chicken.

Ingredients

  • 2 cloves garlic, sliced thinly
  • 400 grams chicken breast
  • 2 teaspoons cajun seasoning
  • 250 grams strawberries, tops removed
  • 1 tablespoons white wine vinegar
  • 1 baby cos lettuce, roughly shredded
  • 1 avocado, sliced
  • 1/4 cup mint leaves
  • 1/2 cup walnuts, toasted
  • 1 tablespoons olive oil

  • 1 tablespoons olive oil

Method

  1. Step 1 of 4
    Heat the oil in a large frying pan to medium heat. Add the sliced garlic, cooking for 2 to 3 minutes until golden. Spoon the garlic out of the pan and set aside.
  2. Step 2 of 4
    Season the chicken breast with the Cajun and add to the pan, cooking for 7 minutes each side or until cooked through. Remove from the pan and let it rest before cutting into slices.
  3. Step 3 of 4
    For the dressing, blitz or mash 5 strawberries with the vinegar. Cut the remaining strawberries into quarters.
  4. Step 4 of 4
    To assemble the salad, into a large bowl, place the separated cos leaves, chicken, fried garlic, avocado, and strawberries. Sprinkle over the mint leaves and toasted walnuts, and drizzle the dressing before tossing well.
