Strawberry & Rosé Mimosa

Toast to the summer holidays and the festive season with a Strawberry & Rosé Mimosa! This fresh cocktail is a sweet as twist on the classic mimosa. Cheers!
Recipe Tip We recommend choosing a dryer styled Rosé so it is not a sweetness overload.

Ingredients

  • 1 punnet strawberries
  • 1/2 fresh orange juice
  • 2 sprig thyme
  • 2 tablespoons caster sugar
  • 1 cup sparkling rosé or prosecco rosé

Method

  1. Step 1 of 4
    Run the orange wedge around the rim of the glasses and dip each glass into the sugar. Set aside.
  2. Step 2 of 4
    Combine strawberries and sugar in a blender and blitz until smooth. Strain through a sieve to remove seeds. Add orange juice and stir to combine.
  3. Step 3 of 4
    Pour the Rosé in the flutes to about ¾ full and top with the strawberry mixture.
  4. Step 4 of 4
    Garnish each glass with thyme sprig and enjoy!
