Super Green Guacamole with Bagel Chips

This guac rocks! Our recipe for Super Green Guacamole with Bagel Chips is a healthier alternative to guac and corn chips with the goodness of both avocados and edamame beans.

Ingredients

  • 2 avocados, stones removed
  • 1 cup edamame beans
  • 1 spring onion, sliced
  • 1 clove garlic, chopped roughly
  • 1/2 cup coriander, chopped roughly
  • 1 lime, juice and zest
  • 1/4 teaspoons ground cumin
  • 1 pinch salt and pepper
  • 2 avocados, stones removed
  • 1 cup edamame beans
  • 1 spring onion, sliced
  • 1 clove garlic, chopped roughly
  • 1/2 cup coriander, chopped roughly
  • 1 lime, juice and zest
  • 1/4 teaspoons ground cumin
  • 1 pinch salt and pepper

Method

  1. Step 1 of 3
    Place the avocado flesh, edamame beans, spring onion, garlic, coriander, cumin, lime zest and juice into a food processor. Blitz until smooth. Season with salt and pepper.
  2. Step 2 of 3
    For the bagel chips, preheat an oven to 180˚C (160°C fan forced. Place the sliced bagels onto an oven tray. Brush with butter and sprinkle the herbs on top. Bake for 10 minutes until crisp and golden.
  3. Step 3 of 3
    Serve the guacamole with the bagel chips on the side.
