Toasted Cheesy Onion Ciabatta

Ingredients

  • 2 onions, sliced
  • 8 slices ciabatta bread
  • 1/2 cup aioli
  • 80 grams feta, crumbled
  • 2 cups tasty cheese, grated
  • 1 tablespoons fresh chives, chopped
  • 2 tablespoons olive oil
  • 1 teaspoons brown sugar
  • 1 teaspoons balsamic vinegar
  • 2 onions, sliced

  • 80 grams feta, crumbled
  • 2 cups tasty cheese, grated
  • 1 tablespoons fresh chives, chopped
  • 2 tablespoons olive oil

  • 1 teaspoons balsamic vinegar

Method

  1. Step 1 of 6
    Place the oil and onions into a large frying pan. Slowly bring to heat.
  2. Step 2 of 6
    Cook the onions for 25 minutes over low heat until completely softened and starting to caramelise. Add the sugar and balsamic and cook for 10 minutes until golden brown.
  3. Step 3 of 6
    Toast the Ciabatta slices.
  4. Step 4 of 6
    Preheat the oven grill.
  5. Step 5 of 6
    Place the toasts onto an oven tray. Top with aioli, onions, cheese, and feta.
  6. Step 6 of 6
    Place under the grill for 3 or 4 minutes until golden and the cheese has melted. Serve with a sprinkle of chives.
