Tomato, Date & Apple Relish

Ingredients
- 1 onion, roughly chopped
- 8 medjool dates, pitted and roughly chopped
- 4 centimeters ginger, peeled and sliced
- 4 cloves garlic, chopped
- 800 grams canned cherry tomatoes
- 1 granny smith apple, cored and cut into 1cm pieces
- 2/3 cup apple cider vinegar

- Step 1 of 4Blitz onion, dates, ginger and garlic in a food processor until finely chopped. Transfer to a saucepan.
- Step 2 of 4Add the cans of tomatoes with juice, the apple and the vinegar. Lightly crush tomatoes with a fork.
- Step 3 of 4Bring to a simmer over medium heat, reduce heat to medium-low, and cook, stirring occasionally, for 45 minutes or until reduced and thickened.
- Step 4 of 4Pour into hot sterilised jars and seal. Store in the fridge for up to 1 month.
