Tzatziki Bites
These Tzatziki Bites are easy to prepare and full of flavour. Perfect for entertaining or just as a tasty snack
Ingredients
- 1 cup non-dairy yoghurt
- 1/4 telegraph cucumber
- 1 clove garlic
- 1 tablespoons lemon zest
- 2 tablespoons lemon juice
- 1 tablespoons chives
- 1 pinch chilli flakes
- 8 medium to large crackers, halved
- 8 cherry tomatoes
- 1 cup non-dairy yoghurt
- 1/4 telegraph cucumber

- Step 1 of 4Place the yoghurt into a sieve over a bowl and leave it for 20 minutes to allow any liquid to drain out.
- Step 2 of 4Grate the cucumber and garlic into a small bowl, sprinkle with a little salt and sit for 10 minutes. Squeeze out any excess water.
- Step 3 of 4Place the drained yoghurt, cucumber, lemon zest and juice, chives and chilli flakes into a bowl, stirring well to combine. Store in the fridge until needed.
- Step 4 of 4Serve a spoonful of the tzatziki on each seed cracker with half a cherry tomato and a sprinkle of chives on top.
