Vegetable Fajitas

Ingredients

  • 1 red pepper, sliced
  • 1 red onion, sliced
  • 200 grams mushrooms, sliced
  • 2 cloves garlic, crushed
  • 1 teaspoons smoked paprika
  • 1 teaspoons ground cumin
  • 1 pinch chilli flakes
  • 400 grams kidney beans, drained
  • 400 grams canned chopped tomatoes, drained
  • 1 cup coriander, chopped
  • 8 small tortillas
  • 1/2 cup sour cream
  • 1/2 cup chipotle mayo
  • 2 limes
  • 1 cup guacamole
  • 2 tablespoons olive oil
  • 1 teaspoons salt and pepper

Method

  1. Step 1 of 5
    Preheat the oven to 200°C (180°C fan-forced).
  2. Step 2 of 5
    On a large baking tray, place the pepper, onion, mushrooms and garlic. Sprinkle over the paprika, cumin, chilli and oil. Toss all together, then add the kidney beans and tomatoes. Place into the oven for 25 minutes.
  3. Step 3 of 5
    Remove and stir through the coriander, season with salt and pepper.
  4. Step 4 of 5
    Brown the tortillas in a frying pan for 20 seconds on each side or heat in a Microwave.
  5. Step 5 of 5
    Divide warm tortillas between plates. Top with the fajita mixture. Add a good dollop of your favourite topping with a squeeze of lime on top.
