Vegetable Packed Topside Pie

Ingredients

  • 500 grams beef topside
  • 1 onion, chopped roughly
  • 2 carrots, chopped roughly
  • 1 cup beef stock
  • 2 tablespoons worcestershire sauce
  • 2 teaspoons brown sugar
  • 2 tablespoons butter
  • 1/4 cup flour
  • 1 cup frozen peas

Mashed potatoes

  • 4 medium potatoes
  • 1/4 cup milk
  • 1 tablespoons butter
  • 500 grams beef topside
  • 1 onion, chopped roughly
  • 2 carrots, chopped roughly
  • 1 cup beef stock
  • 2 tablespoons worcestershire sauce
  • 2 teaspoons brown sugar
  • 2 tablespoons butter
  • 1/4 cup flour
  • 1 cup frozen peas

Mashed potatoes

  • 4 medium potatoes
  • 1/4 cup milk
  • 1 tablespoons butter

Method

  1. Step 1 of 6
    Preheat the oven to 150°C (130°C fan-forced).
  2. Step 2 of 6
    Into a casserole dish, place the topside, onion, carrots, beef stock, Worcestershire and sugar. Place into the oven for 2 hours or until tender and shred with a fork. Shred the meat into the juices.
  3. Step 3 of 6
    In a pot, melt the butter. Add the flour and cook for 2 minutes. Slowly add 2 cups of the liquid from the casserole dish to make the sauce. Add in the vegetables and roughly half of the meat. Season with salt and pepper. Spoon into the casserole dish and sprinkle in the peas.

    For the mash, boil the potatoes in salted water until soft. Drain and mash with the milk and butter. Dollop and spread evenly on top of the pie.

    Preheat the oven to 180°C (160°C fan-forced).

    Place the casserole dish into the oven for 15 minutes to heat through.
