Ingredients

  • 1/2 cup frozen peas
  • 1/2 slice light tasty cheese
  • 1 leaf baby spinach
  • 1/4 sheet nori
  • 1/4 teaspoons light mayonnaise
  • 2 pieces coconut flakes
  • 4 chives
  • 1 slice wholemeal sandwich bread
  • 1 tablespoons water, boiling
  • 1/2 cup frozen peas
  • 1/2 slice light tasty cheese
  • 1 leaf baby spinach
  • 1/4 sheet nori
  • 1/4 teaspoons light mayonnaise
  • 2 pieces coconut flakes
  • 4 chives
  • 1 slice wholemeal sandwich bread
  • 1 tablespoons water, boiling

Method

  1. Step 1 of 5
Cook peas in a small saucepan of boiling water for 2 minutes or until bright green and tender. Drain, reserving 1 tbs boiling water. Place peas and reserved boiling water in a small food processor. Process, scraping down side, until almost smooth. Press pea mixture through a fine sieve set over a small bowl. Discard solids.
  2. Step 2 of 5
To make Mike's eye, use a 3.5cm round cutter to cut round from cheese slice. Using a 2cm round cutter, cut round from spinach leaf. Using scissors, cut a small 7mm round from nori. Using the picture as a guide, layer spinach and nori onto cheese round and secure with a little mayonnaise. Using a toothpick, dot a little mayonnaise on the edge of nori.
  3. Step 3 of 5
To make Mike's mouth, using the picture as a guide and scissors, cut nori into a 2cm wide x 5cm long mouth shape. Then cut a 1cm wide x 4.9cm long mouth shape from cheese. Using a small sharp knife, trim cheese along the bottom edge at approx 7mm intervals to create teeth. Layer cheese onto nori, securing with a little mayonnaise.
  4. Step 4 of 5
Cut 1cm x 12mm horn shapes from coconut flakes to create horns. Trim 2 chives to 7cm in length, then fold/bend at 3.5cm for left arm and fold/bend other chive at 4cm for right arm. Trim 1 remaining chive to 5.5cm length and fold/bend at 2cm to create left leg. Trim remaining chive to 6.2cm and fold/bend at 3cm for right leg.
  5. Step 5 of 5
Toast bread until golden-brown. Using the picture as a guide, spread puree onto toast to form a circle. Arrange eye, mouth and horns on puree, followed by arms and legs. Serve.
