Buttercup squash has dark, rich green, hard skin with speckles and stripes. The flesh is orange to dark yellow with a slightly sweet flavour.

traditionally squah has been roasted, however it can be used in soups, flans, pies, muffins, or stuffed. They make a delicious side vegetable and their flavour is enhanced by nutmeg. Cooked and cooled squash is also good in a salad.
