Fresh tip: To freeze capsicum, remove the stem and seeds, then dice or slice. Place on a baking sheet in a single layer and freeze for an hour. Put the frozen capsicum into a bag, pressing out the air, then pop back into the freezer. For best results, use within 6 months of freezing.
